  1. Prepare the ingredients: Slice the smoked sausages into 1/4-inch rounds. Dice the potatoes, red bell pepper, green bell pepper, and onion. Mince the garlic.
  2. Cook the potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and tender, about 10-12 minutes. Stir occasionally to ensure even cooking. Once cooked, remove the potatoes from the skillet and set them aside.
  3. Sauté the vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onions and cook until they start to soften, about 3 minutes. Add the bell peppers and minced garlic. Season with smoked paprika, dried thyme, salt, and pepper. Cook until the vegetables are tender, about 5-7 minutes.
  4. Cook the sausage: Add the sliced smoked sausages to the skillet with the vegetables. Cook for an additional 5 minutes until the sausages are heated through and slightly browned.
  5. Combine and finish: Return the cooked potatoes to the skillet and stir to combine everything. Sprinkle the shredded cheese over the top and cover the skillet. Cook for another 2-3 minutes, or until the cheese is melted.
